Ingredients
900g stewing beef, diced
900g fresh shelled green peas
1/4 stick butter
1 medium onion, roughly chopped
110g canned whole peeled tomatoes, crushed with a fork
2 tablespoons extra-virgin olive oil
900ml beef broth
salt and pepper to taste
Method
Heat butter and oil in a heavy pan over medium heat. Saute the onion for a few minutes until soft and starting to caramelize. Add the meat and sear for 10 minutes until browned on all sides. Add the peas and let them cook for another few minutes. Pour in the broth and crushed tomatoes and season with salt and pepper.
Simmer gently over medium heat, uncovered, for about 1 hour until the sauce has reduced and the meat is tender.
