Country style sausages with lentils

Ingredients

900g fresh Italian-style pork sausages
400g brown lentils
400g canned whole peeled tomatoes, deseeded and chopped
1 carrot
2 garlic cloves
1 celery stalk
2 tablespoons extra-virgin olive oil
salt and freshly ground black pepper to taste

Method

Roughly chop one garlic clove, carrot and celery, and put them in a saucepan with the lentils. Cover with water and bring to a boil over medium heat. Simmer for 20 minutes, then remove from the heat but do not drain.

In the meantime, finely chop the remaining clove of garlic and saute it in olive oil in a heavy frying pan over medium heat until soft. Add the sausages and brown them, then add the tomatoes.

Continue cooking for about 15 minutes until the tomatoes have broken down and the sauce has thickened. Add the lentils with their liquid, and season with salt and black pepper. Simmer gently for a further 15 minutes. Serve hot.
